Great cooking doesn’t always demand complex techniques. Incredibly satisfying meals can be made from simple ingredients that are treated with respect. Here, I combine fish stock, tomatoes and shrimp for a hearty and soulful meal.

The Prep
Prepare 8 quarts of fish stock.
Peel and devein 1lb of shrimp.
Hand crush 32oz of whole tomatoes.
Smash three garlic cloves.
Mince one shallot.
Zest one orange.

The Assembly
Reduce the fish stock by 25%.
Add the crushed tomatoes, garlic cloves, minced shallot, a bundle of fresh thyme tied with string and the zest of one orange.
Simmer over medium heat for an hour.
Add the shrimp.
Cook for an additional 10 minutes.
The Payoff
Serve with a crusty baguette and a simple salade dijonnaise.
